Creamy Chicken Quinoa and Broccoli Casserole 🌱 Credit: @pinchofyum🌱 INGREDIENTS🌱 2 cups reduced sodium chicken broth 1 cup milk (I used 2%) 1 teaspoon poultry seasoning ½ cup flour 2 cups water, divided 1 cup uncooked quinoa, rinsed ¼ cup cooked, crumbled bacon (optional… sort of) 1 pound boneless skinless chicken breasts 2 teaspoons seasoning (like Emeril's Essence or any basic blend you like) ¼ cup shredded Gruyere cheese (any kind will work) 3 cups fresh broccoli florets INSTRUCTIONS🌱 Sauce: Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms. Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Bake uncovered for 30 minutes. Broccoli: While the casserole is in the oven, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside. Bake: Remove the casserole from the oven, check the mixture by stirring it around in the pan, and if needed, bake for an additional 10-15 minutes to get the right consistency. When the quinoa and chicken are cooked and the sauce is thickened, add the broccoli and a little bit of water (up to one cup) until the consistency is creamy and smooth and you can stir it up easily in the pan. Top with the cheese and bake for 5 minutes, or just long enough to melt the cheese.

Turkey Taco Lettuce Wraps🔥 Credit: @thecozycook🔥 Ingredients🔥 1 pound lean ground turkey (Can substitute ground beef or shredded chicken) 1 small red onion, diced ⅔ cups water 1 (1 oz.) packet Taco Seasoning 1 (15 oz.) can black beans 1.5 cups diced vegetables: Tomatoes/Bell/Peppers/Corn/Red Onion ½ cup black olives, sliced 12 romaine lettuce leaves= 6 wraps (each wrap uses 2 overlapped leaves) 1 cup Sour Cream 2 cups shredded Mexican Cheese Instructions🔥🔥🔥 In a medium-sized saucepan over medium heat, add ground turkey (or meat of choice) and cook on medium heat for about 20 minutes, stirring occasionally. The meat should be fairly cooked through and the onions should be softened. Add ⅔ cup water and 1 packet taco seasoning and continue to cook for additional 10 minutes. Add ½ black beans, all of the diced vegetables, and black olives and sauté for 5 minutes. Prepare wraps by overlapping 2 lettuce leaves onto a plate. Scoop taco filling into each wrap. Top with a scoop of sour cream and sprinkle with cheese. Now, isn’t that just a bite of heaven?

Ground Turkey Tacos💥 Credit: @joyfulhealthyeats💥 Ingredients💥 1 tablespoon olive oil 1.25 lbs lean ground turkey (93/7) 1 cup diced red onion 1 garlic clove, minced 1½ tablespoons cumin 2 teaspoons smoked paprika 2 teaspoons ancho chili powder ½ teaspoon ground cinnamon ½ teaspoon of salt ¼ teaspoon of pepper Cilantro Lime Crema💥 1 garlic clove ½ cup stonyfield plain greek yogurt ¼ cup cilantro juice of 1 lime (about 2 tablespoons) ½ teaspoon ground cumin salt & pepper to taste 1 avocado, diced ½ cup cherry tomatoes, halved 10-12 leaves of Butter Lettuce 2 tablespoons of fresh cilantro Instructions💥 In a food processor add, garlic clove, greek yogurt, cilantro, lime juice, ½ teaspoon of cumin, salt and pepper to taste. Blend until smooth. Set aside. Heat a medium saute pan to medium high heat. Add olive oil and red onion. Saute until translucent, about 3-4 minutes. Add in garlic, saute for 30 seconds. Add lean ground turkey, cook until no longer pink. Approximately 7-10 minutes. Add in 1½ tablespoons of cumin, smoked paprika, ancho chili powder, ground cinnamon, salt, and pepper. Stir until all the spices are mixed together. Serve turkey mixture on top of butter lettuce with avocado, cherry tomatoes, fresh cilantro, and cilantro lime crema.
